Volker M. Fuhrwerk, Chef in the Hotel-Restaurants Ole Liese serves modern Northern Germany dishes and in the elegant Restaurant “1797”, which has got a popular star, from the Guide Michelin in November 2014.
What is so special about its kitchen? Classic and regional ingredients, as kale get a new interpretation with a different cutting, filigreen treetment and fascinating combination with other delicacies.
Important for the chef is to Focus on the traditional Northern Germany kitchen. With that in mind he refines classic, without changes the taste all over. Doing that, additions like camomile and spruce shoots are used. Volker Fuhrwerk gets inspired in nature and uses a lot of seasonal products.
